Our first taste of summer captured in this refreshing Mediterranean Chicken Quinoa Salad. Season with ToutEpis!
Ingredients
- ¾ tbsp ToutSos
- 1 tbsp Konfi Lay Oil
- 1 ½ tbsp avocado oil
- ½ tsp cumin
- ¼ tsp cinnamon
- ½ cup plain Greek yogurt
- 3 chicken thighs (6oz)
- 1 ½ cups cooked quinoa
- 1 lemon
- ¼ cup finely chopped red onion
- 1 cup diced tomatoes
- 1 cup diced cucumber
- Handful of chopped fresh parsley
- 2 tbsp mayo
- ⅛ cup white wine vinegar
- Salt and pepper to taste
Instructions
Chicken
- Marinate rinsed chicken thighs in a bowl with ToutSos, cumin, cinnamon, ½ tbsp Konfi Lay Oil, 2 tbsp yogurt, lemon juice, salt, and pepper. Mix well and set aside.
- Heat 1 tbsp avocado oil in a medium pan. Cook chicken until browned, about 4-5 minutes on each side.
Salad
- Chop cucumber, tomato, and red onion, then sprinkle with salt, pepper, ToutSos, and lemon juice. Set aside.
- In a bowl, mix ¼ cup yogurt, mayo, white wine vinegar, salt, and pepper to make the dressing.
- Combine salad ingredients with cooked quinoa and chicken in a separate bowl. Pour dressing over and enjoy!
