Pan Sheet Roasted Fish & Vegetable Dinner



  • Asparagus
  • Sweet Peppers
  • 2 heads of Broccolis
  • ¾ lbs of baby red potatoes (~8 potatoes)
  • 3 large portobello caps
  • 1 onion
  • 1 tomatoes
  • 2 fish filets*
  • ½ tbsp of ToutEpis Infused oil
  • ½ tbsp of Olive Oil
  • Salt to taste



  1. Preheat oven to 400° F
  2. Drizzle ½ tsp of Konfi Piman Oil on the mushroom. Rub thoroughly, sprinkle salt and pepper
  3. Place in a baking dish one their belly 
  4. Cut potatoes, tomatoes, onions, sweet peppers in cube and put on sheet pan
  5. Clean broccoli and asparagus. Place on sheet pan
  6. Towel dry fish. Place on a sheet pan. Drizzle Konfi Piman on both. Generously salt and pepper
  7. Drizzle olive oil on vegetables (except mushrooms). Add salt and pepper to taste
  8. Cook in the over for 30 minutes


*You can substitute the fish with other quick cooking proteins (sausages, tofu, chicken breast, etc)
